New Recipe!!

You all must drop what you are doing and head to the store right now. I promise you will not be disappointed!!! As I was fumbling through my Google Reader this morning, I ran across a post on how to make Oat Cakes. Yes, I know, the name sounds like something you would feed a horse or other animal at a petting zoo, but believe me, I would not waste this on an animal. The recipe comes from One Golden Apple. Please use the link in order to get the original recipe. I did make an adjustment to mine by adding 1/2-1C Craisins and using a 1/3 C brown sugar instead of 1/4C. These are easy, quick and tasty. I recommend using a smaller cookie cutter because these are filling. My first batch I realized that and used a smaller one on my next batch. Another great thing is that all the ingredients can just be tossed in the food processor so there isn't a huge mess to clean up. The main ingredients are oats and almonds so really these come out to be a lot like a granola bar. Love them! After letting Mark have a taste on his lunch break, he demanded that I make another batch ASAP. Glad I bought extra almonds!! Warning: If you are like me and just have to taste the dough before baking, you may not end up with a finished product because the prebaked goodness is heavenly!!! (You actually could eat all of the dough instead of baking because there are no eggs in the batter. Eek!) So hurry up and make these so you can let me know what you think!!
